Oven-baked daikon (white radish) is the perfect substitute for potato wedges while doing keto! Daikon is a vegetable that contains only 4.1 g net carbs per 100 g. When it's raw the taste is bitter just as a radish, but when you cooked it tastes pretty much as potatoes. You have to give oven-baked daikon a try!

Ingredients
- 500 g daikon (white radish)
- 2 tbsp oil
- Salt and pepper
Instructions
- Peel the daikon and cut into wedges.
- Preheat oven to 225 degrees C.
- Pre-cook the daikon wedges by boiling them in water for approx. 30 minutes or until softened.
- Pour off the water and place the wedges on a baking sheet. Toss with oil, salt and pepper.
- Bake until golden and crisp, 30 minutes or longer.
