- 1/2 butternut squash
- 1/2 swede
- 1 tbsp olive oil
- Salt and pepper
- Preheat oven to 225 degrees.
- Peel your butternut squash and swede and slice into cubes. Toss it with olive oil, salt and pepper in a bowl.
- Move the vegetables to a baking sheet.
- Roast in the preheated oven until squash and swede is tender and lightly browned, about 25 minutes.
