Oven-roasted butternut squash

Roasted butternut squash and swede contains a bit more carbs and should preferably be avoided during weight loss. This is a great side dish during summer. It’s simple and delicious!

  • 1/2 butternut squash
  • 1/2 swede
  • 1 tbsp olive oil
  • Salt and pepper


  • Preheat oven to 225 degrees.
  • Peel your butternut squash and swede and slice into cubes. Toss it with olive oil, salt and pepper in a bowl. 
  • Move the vegetables to a baking sheet. 
  • Roast in the preheated oven until squash and swede is tender and lightly browned, about 25 minutes.
