Ingredients

  • 1/2 kg veal chuck
  • 1 onion
  • 3 garlic cloves
  • 3 tbsp veal fond
  • 125 g fresh thyme
  • 3 bay leaves
  • 2 large carrots
  • 200 g mushrooms
  • 1 cup white wine
  • 1 cup fresh cream
  • Salt and pepper
  • Butter to fry in

Instructions

  • Peel and chop the carrot, onion and garlic. Slice the meet into cubes the size of 2 x 2 centimeters. 
  • Fry the meat, onion, garlic, mushrooms and bay leaves in a large pot on low heat.
  • Pour in wine and let simmer for a couple of minutes. 
  • Add the carrots, fresh chopped thyme and veal fond. Add enough water to cover the meat and vegetables completely. 
  • Bring to a boil and let simmer for at least 2 hours.
  • Once the stew has simmered for 2 hours and the meat is tender enough. Add fresh cream and flavor with salt and pepper.
  • Serve with any side of your liking, for example cauliflower rice.
