Vegetable stew with tarragon

This vegetable stew with tarragon is so creamy and yummy! You can serve it with cauliflower rice or shirataki noodles, or you can eat the stew just as it is.

Servings 4 portions


  • 1 onion
  • 1 red onion
  • 3 cloves garlic
  • 2 carrots
  • 1 head of broccoli
  • 6 mushrooms
  • 3 oz. spinach
  • 1 red pepper
  • 1 1/2 cups water
  • 1 1/2 cups fresh cream
  • 2 vegetable bouillon cubes
  • 2 tbsp tarragon
  • Salt and pepper
  • Butter to fry in


  • Chop all vegetables.
  • Fry onions, garlic and mushrooms on medium heat in a large cooking pan.
  • Add carrots, broccoli, tarragon, vegetable stock and cover the with water. Let simmer for 15 minutes.
  • Add fresh cream and let simmer for just a few more minutes.
  • Season with salt and pepper.
  • Add spinach and red pepper just before serving.
  • Serve with shirataki noodles or cauliflower rice.
