Ingredients
- 1 onion
- 1 red onion
- 3 cloves garlic
- 2 carrots
- 1 head of broccoli
- 6 mushrooms
- 3 oz. spinach
- 1 red pepper
- 1 1/2 cups water
- 1 1/2 cups fresh cream
- 2 vegetable bouillon cubes
- 2 tbsp tarragon
- Salt and pepper
- Butter to fry in
Instructions
- Chop all vegetables.
- Fry onions, garlic and mushrooms on medium heat in a large cooking pan.
- Add carrots, broccoli, tarragon, vegetable stock and cover the with water. Let simmer for 15 minutes.
- Add fresh cream and let simmer for just a few more minutes.
- Season with salt and pepper.
- Add spinach and red pepper just before serving.
- Serve with shirataki noodles or cauliflower rice.
