Chop all vegetables.
Fry onions, garlic and mushrooms on medium heat in a large cooking pan.
Add carrots, broccoli, tarragon, vegetable stock and cover the with water. Let simmer for 15 minutes.
Add fresh cream and let simmer for just a few more minutes.
Season with salt and pepper.
Add spinach and red pepper just before serving.
Serve with shirataki noodles or cauliflower rice.
