Karelian Hot Pot Keto, or karjalanpaisti as it's originally called, is a traditional dish from Finland. Since my partner has family in Finland this lovely dish was introduced into my life. The dish reminds me of a traditional Swedish dish called Kalops, but in this one you use both pork and beef.

500gpork but
500gbeef chuck
2onions
5-10black peppercorns
5bay leaves
Salt

Instructions
Pre-heat oven to 150 degrees.
Cut all the meat into cubes (3x3 cm).
Place the meat in an ovenware. There is no need to fry the meat first.
Chop up two onions and place in the ovenware together with the meat.
Season with a generous amount of salt, add 5-10 black peppercorns and 5 bay leaves.
Add enough cold water to cover all of the ingredients. Cover with tinfoil.
Place the ovenware in the oven and cook for 8 hours.

The best part about the Karelian stew is how simple it is to make. You barely have to do anything. You can even place it in the oven before you go to bed and it will be done the next morning. If you can handle a bit more carbs I recommend adding a few carrots into the hot pot.
