Chicken stew with sun-dried tomatoes

Ingredients

  • 4 pcs chicken breast
  • 1 clove garlic
  • 10-15 pcs sun-dried tomatoes
  • 1 cup spinach
  • 1 1/5 cup fresh cream
  • 3/4 cup creme fraiche
  • 2 tbsp chicken fond
  • Salt and pepper
  • Butter to fry in

Instructions

  • Slice the chicken mat into cubes. 
  • Fry in butter on medium heat for about 10 minutes.
  • Add chopped garlic, finely sliced sun-dried tomatoes, fond, cream and creme fraiche.
  • Let simmer on medium heat for 10 minutes.
  • Flavor with salt and papper.
  • Add the spinach and let simmer for a few more minutes.
  • Serve with cauliflower rice.
