Oven-Roasted Butternut Squash with Parsley Sauce is a great dish for Vegetarian Keto! Especially during summer. t's simple and delicious! Note that Butternut Squash contains a bit more carbs and should preferably be avoided during weight loss.

Ingredients
Oven-roasted butternut squash
- 1/2 butternut squash
- 1 tbsp olive oil
- Salt and pepper
Parsley and chives sauce
- 1 cup sour cream
- 1 tsp paprika powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp finely chopped parsley
- 1 tbsp finely chopped chives
- Salt and pepper
Instructions
Oven-roasted butternut squash
- Preheat oven to 225 degrees.
- Peel your butternut squash and swede and slice into cubes. Toss it with olive oil, salt and pepper in a bowl.
- Move the vegetables to a baking sheet.
- Roast in the preheated oven until squash and swede is tender and lightly browned, about 25 minutes.
Parsley and chives sauce
- Mix together all ingredients in a bowl.
- Garnish with some extra parsley and serve together with your oven-roasted butternut squash!
