Ingredients
- 1 red onion
- 3 cloves garlic
- 1 tbsp grated ginger
- 1/2 red bell pepper
- 1/2 head of broccoli
- 1/2 zucchini
- 3 carrots
- 5 mushrooms
- 1 can of coconut milk
- 1/2 cup creme fraiche (skip for vegan or paleo friendly dish)
- 1 tsp soy sauce
- 2 tsp red curry paste
- 1 cube vegetable stock
- 1 tbsp tomato paste
- 1 tbsp paprika powder
- Salt and pepper
Instructions
