Creamy Red Curry Recipe

This red curry recipe is creamy and very tasty. If you prefer making a dish without dairy products (vegan or paleo) you can skip the creme fraiche in this recipe.

Ingredients

  • 1 red onion
  • 3 cloves garlic
  • 1 tbsp grated ginger
  • 1/2 red bell pepper
  • 1/2 head of broccoli
  • 1/2 zucchini
  • 3 carrots
  • 5 mushrooms
  • 1 can of coconut milk
  • 1/2 cup creme fraiche (skip for vegan or paleo friendly dish)
  • 1 tsp soy sauce
  • 2 tsp red curry paste
  • 1 cube vegetable stock
  • 1 tbsp tomato paste
  • 1 tbsp paprika powder
  • Salt and pepper

Instructions

  • Chop all vegetables and grate the ginger.
  • Put butter, mushrooms, garlic and ginger into a pan and cook on low-medium heat.
  • Add the rest of the ingredients. Bring to a boil and let simmer for 10 minutes.
  • Serve with sliced bell pepper and spinach.
