Chicken and broccoli casserole with ajvar

Ajvar is a pepper-based condiment made from red bell peppers, eggplant and olive oil. Ajvar is often used in the Balkans cuisine. It’s a very tasty dish so come on and give it a try!

Ingredients

  • 3 boneless chicken breasts
  • 1 broccoli
  • 1 cup creme fraiche
  • 1/2 cup fresh cream
  • 3/4 cup ajvar
  • 1 tbsp chicken fond
  • 3 cloves garlic
  • Salt and pepper
  • Butter to fry in
  • 100 g cherry tomatoes
  • 100 g spinach
  • 1-2 cups shredded cheese

Instructions

  • Pre-heat oven to 225 degrees. 
  • Slice the chicken breasts into 1-inch thick strips.
  • Heat butter in a large skillet over medium/high heat. Once pan is hot, add chicken and saute until golden.
  • Transfer chicken to a casserole baking dish and add broccoli.
  • Heat butter in a small sauce pan and add chopped garlic. Saute for a few minutes on low-medium heat and add creme fraiche, fresh cream, chicken fond and ajvar.
  • Bring to a boil and then pour sauce over the chicken and broccoli.
  • Top with cherry tomatoes, spinach and shredded cheese.
  • Cover with foil and bake casserole at 225 degrees for 25 minutes.
