Carrot Pasta with Halloumi

Spiralized carrots are a good substitute for spagetti when you’re on a keto diet. In this recipe I made a vegetarian pasta sauce with haloumi cheese, cherry tomatoes, mushrooms and spinach.

Ingredients

  • 3 carrots (spiralized)
  • 4 large mushrooms
  • 100 g halloumi cheese sliced
  • 3/5 cup fresh cream
  • Spinach
  • 1 cube vegetable stock
  • 2 cloves garlic
  • Salt and pepper
  • Butter to fry in

Instructions

  • Fry the mushrooms and halloumi together with the garlic.
  • Add fresh cream and vegetable fond. Let simmer for 10 minutes.
  • Cook the spiralized carrot for about 3 minutes.
  • Add the carrots to your pasta sauce.
  • Add spinach and cherry tomatoes and stir. 
  • Serve!
